Elizabeth "Eby" (Woods) Lundbeck, age 89, of Lakeville, MN, passed away on February 20, 2025. Born on October 20, 1935, in Corydon, IA, she was the beloved daughter of Ida and Clarence "Henry" Woods. In 1967, she married Oscar, and together they made their home in Burnsville. Eby was preceded in death by her parents, husband Oscar, and sister-in-law Marlys Lindstrom.

A proud graduate of Drake University, Eby spent nearly 40 years as a first-grade teacher in Minneapolis, impacting countless student's lives with her dedication. A true people person, Eby built lifelong friendships through her involvement in Kappa Kappa Gamma, PEO, and various golf and game groups.

Eby's adventurous heart led her to travel the world, always eager to explore and have new experiences. She had a passion for sports, especially when it came to her beloved Michigan Wolverines.

Though widowed early, Eby's strength carried her through, creating a rich and fulfilling life for herself and her daughter, Laura. She is survived by her daughter, Laura, and son-in-law, Gerhard Boiciuc, as well as a wide circle of friends who were touched by her kindness, humor, and zest for life.

A memorial service will be held in the spring to celebrate Eby's remarkable life.
