Stella "Dixie" Catherine Niebur, age 96, of Hampton, MN, born on July 11, 1928, in Hampton, MN passed away on July 3, 2025.  Dixie was the daughter of John and Abbie Nicolai.

Dixie was a lifelong member of St. Mathias parish in Hampton.  She attended St. Mathias School through 8th grade and graduated from Farmington High School.  She married Flory Niebur in 1947 after he returned from World War II, together they became a part of the local farm community, raising 10 children on a 365-acre dairy and crop farm.

After Flory's death, July 1, 1982, the farm was sold to her son and Dixie became involved in volunteering at St. Mathias School and Randolph School where she became known affectionately as Grandma Dixie.  She also taught religion classes, was actively involved in church and community organizations (choir and the Hampton Boosters), and volunteered at a non-profit free store in the Twin Cities for 25 years.

Her favorite pastimes were coaching softball, golfing, playing cards, taking senior bus trips, and the time spent with friends and family.  Always a baseball fan, her favorite memories were having her brother, Ray ask her to help him throw out the first pitch at a Twins game and meeting Tony Oliva.

Dixie and Flory had 32 grandchildren, 79 great grandchildren and 4 great-great grandchildren, and welcomed many in-laws to the family.  Gatherings at Dixie's house for the holidays could number 120 people.  Summer gatherings usually included a ball game.  She seldom missed football, volleyball, basketball, softball, baseball, hockey or gymnastics meets when grandchildren or great grandchildren were involved.  She watched countless choir, band and theater performances and county and state fair competitions for 4-H and FFA.  The Randolph FFA gave her an Honorary Chapter degree award for her support of their organization.  Dixie never missed sending a special card to her children, their spouses, grandchildren, great grandchildren, great-great grandchildren, and nieces and nephews for their birthday.

Dixie is survived by her children:  Linda (Dan) Stadler, Larry (Ellen), Mike (Sarah), Charlie (Teresa), Nick (Mary), John (Karen), Jeannie (Duane) Ness, Ann (Mark) May, Betti (Scott) Walter, and Glen (Marcia) and the village she and Flory created.  She is also survived by sister-in-laws LaVonne Nicolai and Alvera Niebur, and her many nieces and nephews.

Dixie is preceded in death by her husband, Flory; siblings, Herb (Irene), Harry (Rene), Ray (Marianne), John C, Mark, Agatha (Vernie) Niebur, Dan and infant sister, Alvera Nicolai.

Mass of Christian Burial will be held 4 PM Friday July 11, 2025, at St. Mathias Catholic Church, Hampton, MN with a gathering of family and friends on Thursday July 10 from 4-7 PM and one hour prior to Mass, all at St. Mathias Church. Dinner to follow Mass.

Instead of flowers or a memorial, she asks that people "do something or give something to a favorite charity or someone less fortunate or a friend or family member.  Just tell them Grandma Dixie sent you."
