Vicki J. Shafer, age 76 of Apple Valley, MN passed away peacefully on March 29, 2026, at her home with family at her side. Vicki was born on August 22, 1949, in Harmony, MN where she grew up and graduated from Harmony High School. Vicki attended Winona State College and received her bachelor degree in Sociology. There she met her husband Bill, and they were married for 53 years. Vicki was active in the church choir, ladies circle, and school activities while she raised four children. She was also a key leader in the Dakota Doers 4-H club for two decades. Vicki worked for Eastview High School as a Lunch Lady for 23 years. She was a Master Gardener for Dakota County for 30 years where she helped many local gardeners, and was known in her neighborhood for her beautiful gardens.

Vicki is survived by her husband, William "Bill" Shafer; children, Jenni, Jacob (Sarah), Isaac (Carolyn), and Vanessa Shafer; grandchildren, Victoria, Veronica, Gavin, Tash, Rhys, Claire, and Maya. Her siblings Judy (Dick) Andrewsen, Ruth (Steve) Naber, Bob (Barb) Michel, Randy (AnnMarie) Ritzer and Stepbrothers Dave and Mike Smutny. She was preceded in death by her parents Vernon and Ruth "Bunny" Michel; stepmom, Paula Smutny-Michel; sister, Penny Michel.

Memorial Service will be held 11 am Friday April 17, 2026, at Grace Lutheran Church, 7800 150th St W., Apple Valley, MN 55124 with a gathering of family and friends starting at 10 am at church. Luncheon to follow at the church.
